Blueberry Overnight Oats Recipe

Hello busy people! 

 

This is easily one of our favorite plant-based breakfasts to meal prep. It's creamy, delicious, and SO EASY TO MAKE! 

 

These blueberry overnight oats are one of our most requested meals to repeat. As you probably know, we serve 5 new recipes every week, but we definitely throw this in the rotation pretty often. Vegan or not, everyone from babies to mamas to professionals and even puppies LOVE this recipe. 

 

So without further adieu, here is the greatest breakfast recipe of all time :D 

 

 

The listed ingredients will make 5 pint sized mason jars. One for each day of the week. 

 

Ingredients: 

 

2.5 cups of Rolled Oats 

2.5 cups of Coconut Milk 

2.5 Tablespoon of Flax Seed 

1 Tablespoon of Vanilla Extract 

5 Tablespoon of Maple Syrup 

2 cups of Blueberries 

 

Toppings:

1 cup of Blueberries

5 Tablespoons of Sliced Almonds 

5 Tablespoons of Coconut Flakes 

 

Mix all of these ingredients into a large bowl and store in the fridge overnight.

When you're ready to eat in the morning, top with some more blueberries, almonds, and coconut flakes. Portion into your pint sized mason jars and VOILA, you have breakfast for the week. If you want to add other toppings, go for it, this recipe is how we serve it for our meal prep service. 

 

Notes:

 

- You can replace the flax seed with chia seeds if you already have them handy. They serve as the binding agent which will give it the thick and creamy texture that makes this recipe so awesome. 

 

- We use all organic ingredients for our meal prep service. However, if you are on a budget, none of the ingredients in this recipe are on the "Dirty Dozen" list, so you are "safe" to buy conventional if you need to. 

 

- This recipe is 100% vegan and also 100% gluten free

Protein: 15 grams

Carbohydrates: 80 grams

Fiber: 14 grams

Fat: 17 grams

 

 

And although this recipe is supposed to be for breakfast, we won't lie, it makes for a great dessert after dinner as well :p
